Lobster Nacho Dip

If you’ve been to Disney’s California Adventure Park you know that the Lobster Nachos are legit. It’s a definite must if you’re at the park. They sell the nachos at the Cove Bar, but be prepared for a line. The line for the bar gets kinda long.

If you’re like me and aren’t always willing to drive to Disneyland just for a lobster nacho craving then you’re going to love this Lobster Nacho Dip!

Ingredients:

  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1/2 cup sour cream
  • 1 cup shredded cheddar jack cheese
  • 2 cups lobster meat (we wanted ours to have tons of lobster meat but 1 cup would be fine too)
  • Cilantro, roughly chopped

Instructions:

  1. In a skillet on medium heat sauté onions and bell peppers until slightly translucent.
  2. Add cheese (put some aside for the topping) and sour cream and mix until cheese is melted.
  3. Add lobster meat, remove from heat, and fold cheese mixture until thoroughly combined.
  4. Place mixture into a baking dish and add remaining cheese to the top.
  5. Broil on high for 3 minutes or until cheese is melted and golden brown.
  6. Garnish with chopped cilantro.
  7. Enjoy!

Easy Spinach and Mushroom Chicken

Ingredients:

  • 2 boneless skinless chicken thighs
  • 1 can Cream of Mushroom
  • 2 cups Spinach
  • 1 cup mushrooms, sliced
  • 1 tbs garlic, minced
  • 1/4 cup onion, diced
  • Olive oil
  • Salt and pepper

Instructions:

  1. Season chicken with salt and pepper (to taste).
  2. In a hot medium pan add chicken and brown on both sides. Remove from heat.
  3. In the same pan add some olive oil and mushrooms. Let them release retained water.
  4. Add onion and garlic to pan and let lightly brown.
  5. Add Cream of Mushroom.
  6. When the cream of mushroom begins to bubble add chicken back to pan.
  7. Add spinach before you turn the burner off and mix.
  8. Serve over rice or pasta.
  9. Enjoy!
